A Delicious and Healthy Meal

Hi Friends!

I posted a photo of a meal I made this weekend and I got a lot of questions about it so I thought I would post it here for you.


Pesto Cauliflower Gnocchi

This is a quick and simple recipe you can make for lunch or dinner and bonus, it’s healthy!


Cauliflower Gnocchi (I get this at Meijer or Trader Joe’s)

Avocado spray oil

Pesto (I buy pre-made pesto)

Fresh Cherry Tomatoes

Fresh Basil (Optional)

Parmesan Cheese


In a medium pan, sauté the gnocchi in avocado oil until browned. Cut up as many cherry tomatoes as you would like. Place the gnocchi in a bowl, add the pesto and tomatoes and top with parmesan cheese. If you have fresh basil you could also add that as well.
